These little parcels of golden crusts and sweet minced fruit are Christmas in a bite. All you need is a good cup of coffee or tea for the perfect treat. Make up a batch and share them with the office. You’ll be as popular as Santa.

Di's mince tarts with crumble topping
- 1 packet of Pampas frozen sweet tart cases (12 pack)
- 1 jar Robinson fruit mince
- 1 small apple, peeled and finely diced
- 1/2 cup plain flour
- 2 tbs brown sugar
- 55gm melted butter
- 1/3 cup slivered almonds
Method:
►Preheat oven to 180C, bake the pastry shells as instructed on the packet and allow to cool.
►Combine the flour, sugar, almonds and the melted butter into a bowl, mixture should be crumbly but hold together.
►Mix the diced apple and fruit mince together, spoon into pastry cases.
►Top with the almond mixture and bake for 15-20 minutes at 160C.
►Lightly dust with icing sugar before serving.
